Methodology & European VAT Accounting
- Net Revenue Basis: All food cost percentages and contribution margins are calculated on Net Sales (excluding hospitality VAT such as 7% in Germany, 9% in the Netherlands, 10% in Austria/France/Spain, or 20% in the UK).
- Prep & Trim Waste: If 15% of raw weight is lost during trimming or peeling, effective ingredient cost is divided by
(1 − Waste %). - Delivery App Commission Trap: Platforms like Uber Eats, Deliveroo, Wolt, and Just Eat charge their 14%–30% commission on the gross order value (including VAT).
